Baked Garlic Butter & Chive Salmon


  • fresh Scottish salmon fillet - you can use 4 x individual portions (approx. 100-120g) or half a side 
  • 1 lemon, thinly sliced
  • 6 tbsp butter, melted
  • 2 tbsp honey
  • 3 cloves garlic, crushed
  • 2 tsp chopped chives
  • salt and cracked black pepper


  1. Preheat oven to 180oC / 160oC fan / gas mark 4.
  2. Line a large rimmed baking tray with foil and lay lemon slices in an even layer onto the foil.
  3. Place the salmon on top of the lemon slices (skin side down) and season the salmon with salt and cracked black pepper.
  4. In a bowl, whisk together the butter, honey, crushed garlic and chopped chives. Pour over the salmon and then cover with foil.
  5. Bake for 25-30 minutes, until the salmon is cooked through.
