Recipe of the Month - Scottish Smoked Salmon and Poached Egg Bagel

A really simple (but very tasty!) Scottish smoked salmon and egg treat.

  • Prep time: 2 minutes.
  • Cooking time: 5 minutes.
  • Serves 2.

Ingredients:

  • 100g Scottish smoked salmon slices.
  • 2 eggs.
  • 1 wholegrain seed bagel, cut in half and toasted.
  • 2 handfuls rocket.

 

Method:

  1. Poach the eggs according to how you like them.
  2. Place the two bagel halves on 2 plates. Top each with some of the rocket, then add the Scottish smoked salmon slices.
  3. Top with the poached eggs and serve with the remaining rocket and a grind of black pepper.
