Ingredients
- 4 x 170g cod portions
- 4 slices Parma ham
- 4 slices smoked salmon
- 4 sage leaves, plus extra to garnish
- 2tbsp olive oil
For the couscous
- 240g couscous
- 1tbsp olive oil
- 1 onion, chopped
- 1 clove garlic, chopped
- 240g butternut squash flesh, diced
- 1 courgette, diced
- 480ml reduced-salt vegetable stock
- 12 mini plum tomatoes, halved
- Chopped parsley
