Smoked Salmon & Chive Muffins

Ingredients

  • 150g self-raising flour
  •  200ml milk
  •  1 egg, beaten
  •  1 tbsp butter, melted
  •  180g cheese, grated
  •  2 tsps chives, chopped
  •  200g smoked salmon, chopped
  •  cracked black pepper

Method

  1. Preheat oven to 180oC / 350oF / gas mark 4.
  2.  Sift flour into a bowl and make a well in the centre.
  3.  Add the egg, milk and butter and beat until smooth.
  4.  Add the cheese, smoked salmon, chives and a pinch of cracked black pepepr and mix until combined.
  5.  Spoon mixture into muffin cases and bake for 12-15 minutes until golden brown.
