Smoked Salmon & Chive Muffins
Makes 12
Ingredients
- 150g self-raising flour
- 200ml milk
- 1 egg, beaten
- 1 tbsp butter, melted
- 180g cheese, grated
- 2 tsps chives, chopped
- 200g smoked salmon, chopped
- cracked black pepper
Method
- Preheat oven to 180oC / 350oF / gas mark 4.
- Sift flour into a bowl and make a well in the centre.
- Add the egg, milk and butter and beat until smooth.
- Add the cheese, smoked salmon, chives and a pinch of cracked black pepepr and mix until combined.
- Spoon mixture into muffin cases and bake for 12-15 minutes until golden brown.
